Mexi~Can Pizza & Iced Fruit Lollies


Summer brings out the Mexi in me and I start craving tacos and doing my Mexi dance. The other night I was experimenting in the kitchen with a new recipe that is to die for....Mexi~Can Pizza. It took only a few minutes to throw together and tastes divine.

Mexi~Can Pizza

1 box jiffy pizza dough mix

quarter cup of mild salsa

shredded cheese

diced bell peppers

ground beef

crushed tortilla chips (finely chopped)

diced tomato

Mix jiffy dough according to box. Spread salsa over dough and add ground beef and bell peppers. Spread tortilla chips over top and add diced tomato and shredded cheese to top layer. Bake according to jiffy mix instructions.

Summer also brings out my urge to do the iced lolly dance on a hot July day. These fruit lollies are too easy and taste out of this world. All you need is a Popsicle or lolly mold or disposable paper cups, wooden sticks, any clear fruit juice and some of your favorite fruit.

Strawberry~White Grape Juicy Iced Lollies

1 1/2 cups sliced strawberries, halved

4 1/2 cups white grape juice

8 paper cups

8 wooden sticks

Divide sliced strawberries among paper cups. Now pour in juice and insert your wooden sticks. Freeze for at least 6 hours. Let stand for about 5 minutes before unmolding. Makes 8 fruity lollies and freezes beautifully :)
