Yummy Mondays ~ A Smidge of the South

Happy Monday! In honor of Valentines day I have a few sweet and *pink* recipes your sure to love!
Old Southern Cornbread
2 cups self rising stone-ground cornmeal
1 cup self rising flour
3 tablespoons bacon drippings
2 eggs, beaten
2 cups buttermilk
2 tablespoons sugar
Preheat oven to 400 degrees. Put several pieces of bacon in a 10 inch skillet ( cast iron ) and brown in the oven. Meanwhile, combine cornmeal, flour, sugar and mix well. Add 3 tablespoons of bacon drippings , buttermilk and eggs. Mix well. Leave about 2 tablespoons of drippings in skillet. Pour batter into pan. Bake in oven for 35 to 45 minutes or until brown.
Pink Butter
Pour heavy cream into clean baby food jars. Add a couple of drops of red food coloring. Secure the jar with the lids. Then shake until cream turns into butter.
You can now slather your tasty cornbread with fabulous pink butter!
I am making these this weekend for my sweetie on Sunday morning before church.
